Cupcakes with heart cream

For Valentine's day I prepared these cupcakes with heart cream. I have taken the recipe from the Italian monthly magazine "Più Dolci" and I must say that this cupcakes are easy to prepare, light and also delicious!

Ingredients for 8 cupcakes

 For cookie pastry:
 4 eggs
 100 g of sugar
 90 gr of flour
 1 orange

 For the cream:
 200 grams of whipping cream
 50 g of ricotta cheese
 50 grams of soft fruits jam
 25 g of icing sugar
 1 sachet of vanillin (0,5 grams)

 Beat the eggs with the sugar (picture 1), then add the grated orange rind and in the end the flour. Cover a baking tray with wax paper, pour the batter (picture 2) and bake it at 190 degrees for 10 minutes. Take it out of the oven and place it on a dishcloth sprinkled with caster sugar (picture 3). Leave it to cool and then cut into little heart-shaped (picture 4). In a bowl whip, by using a beater, the whipping cream with the icing sugar, then add the vanillin and in the end work in the ricotta cheese using a wooden spoon. Spread the hearts with soft fruits jam (picture 5), then, using a pastry bag with medium star-shaped nozzle, spread the filling on half of the hearts forming at first a frame cord and then replenishing the inside (picture 6). Lay the remaining hearts upon them and decorate with the remaining filling, creating a small tufts frame(picture 7). Bon appetit!
