Pumpkin Cupcakes

Today I propose these pumpkin cupcakes, they are delicious, genuine and light. They are very easy to prepare and can be enjoyed without worrying too much about our figure, they contain very few calories!!!

Ingredients for 8 cupcakes

Pumpkin 500 g (1.1 pound)
Flour 30 g (1/3 cup or 1.06 oz)
Amaretti biscuits 8
Eggs 2
2 tablespoons of honey
A teaspoon of sugar
A pinch of salt
Clean the pumpkin, cut into little cubes, place in a steamer (pic. 1)  and cook for about 15 minutes. Leave it to cool then keep a few pieces aside to garnish and blend the remainder with the eggs, the flour, the crumbled amaretti biscuits, honey and salt (pic.2).
Put the mixture into eight fluted paper cups, arrange them in as many moulds and decorate with the piece of pumpkin kept aside (pic. 3). Bake in a preheated oven at 180°C (356°F) for 30 minutes, then sprinkle with sugar (pic. 4) and bake at 200°C (392°F) for about 5 minutes . Let them cool and serve the cupcakes in their baking paper cups.
